To better assistance, could you confirm if the recurring meeting is a regular meeting or a channel meeting in Teams? This matters because channel meetings have extra limits when editing single occurrences.
In the meantime, you could try to do it in Outlook on the web (fastest, most reliable)
- Go to Outlook on the web => Calendar.
- Find the Monday meeting for the holiday week and open it.
- Select Edit => This event.
- Change Date to Friday (keep the same time).
- Send the update to attendees
I tested this on my side, and it works as expected. The issue might be caused by a synchronization conflict in the Teams client application.
If you prefer staying in Teams, please try again after checking for updates and relaunching the app.
