I have MS365 Premium and have just created a database in Access, but it will only create Access 2016 format

I have not really used Access before, even though I've had it on my computer for many years.

I just created a DB with the help of Copilot. The DB keeps using the 2007-2016 file format.

I've tried to repair it, deleted old versions, reinstalled 365, but every time I try to create a new DB, it opens in 2007-2016 file format. The Access options page gives me the format choices of 2000, 2002-2003, and 2007-2016.

What do I need to do to use the most current file format?
